Garlic grown at Cookstown Greens is available between September to March and sold by the half pound.
Hardneck garlic grows in northern regions with harsh winters. Garlic bulbs have between eight to twenty segments, called cloves. The skins on the cloves are thick and easy to peel.
When eaten raw, garlic has a powerful, pungent flavor. When cooked or sauteed the flavour mellows.
Roasted garlic has a nutty, mild taste.
They can be used raw or cooked. One large clove can be enough to flavour an entire dish.
Roasting or baking the bulbs will bring out the natural sugars, creating a caramelized effect.
