Rutabaga grown at Cookstown Greens are available between September to March and sold by the pound.
Rutabagas are large round root vegetables with a purple top and beige bottom. They have thick woody skin with butter-yellow flesh.
They are sweet and earthy and have a milder taste than turnips.
They can be boiled and mashed, or roasted like you would a potato. Sautee rutabaga with onions, carrot, celery to make a soup base or rutabaga soup.
